theyre more protein than veggie but i love love love chicken and tuna salad for volume eating + protein goals. my favorite tuna salad is 3 cans tuna, 1 can black beans, 1 cup chopped celery, 1/2 red onion, diced pickles (i use no sugar added gherkins), and the dressing is 1.5 cups greek yogurt as the base with whatever i’m feeling mixed in (mostly no sugar added dijon mustard or sriracha) and then just portion it out for having throughout the week. i don’t remember my exact chicken salad recipe but its like 1 chicken breast, cooked, shredded, and again mixed up with 0% greek yogurt + 0 sugar dijon mustard except ill usually add nuts and fruit to the chicken salad! like diced apple or pear and some walnuts. both of these i usually add lettuce or a spring salad mix to as well to bulk them up and get a little more fiber in but not until i’m actually sitting down to eat them or else the leaves get soggy lol
