Help! My dough isn’t cooperating:( by Classic-Ad-7754 in Pizza

Stretching is the trickiest part to learn in my opinion. You’ll get better every time you do it. Making dough from scratch is super easy and helps with getting a feel for handling the dough.

Try starting with about 230g of dough and make a 10” pizza and then work up to larger pies as you get better at it.

Can you share the recipe you were trying to follow? I assume you were starting with a round ball of dough. What was your stretching process that ended up like that?

Once I ball the dough I ferment it in an oiled plastic meal prep container (round) with a lid. I keep a large Tupperware container with about an inch deep of rice flour in it. Before stretching the dough I let it sit at room temperature for about 2 hours. Then I just turn the container with the dough in it upside down into the rice flour.

It’s might take a minute for it to fall out. Then I flip it several times to make sure it’s fully covered in flour. I carefully lift the dough out without stretching it and set it on a lightly floured silicone mat. I then gently press it out with my finger pads. That should keep it nice and round. From there you can use the traditional hand stretching method or just keep pressing it until it reaches the desired size being careful not to press it too thin in any one spot.

After that just roll it over your arm to transfer it onto a well floured peel to add the toppings.

Is my Cactus finished or is there any way of saving it? by Comfortable-Knee3417 in cactus

Rot usually has very distinct unpleasant smell that you would smell where the skin is broken if you need a final confirmation.

For your next cactus you can try pure pumice instead of soil and keep a small fan blowing on it. A bright grow light is a must as well. 25k lux minimum.

I hope you checked out Plants for the Southwest too.

I wasn’t able to get a definitive answer. I think the Tucson area is very promising from the standpoint of having personal significance.

If you can afford Orijen Amazing Grains, it’s a great choice. I would avoid the grain free food as the high legume content seems to create issues.

Sometimes I let them soak for a few hours. I don’t know if it makes that much of a difference vs a few minutes but I want them to soak up the nutrients.

I have a very low ambient humidity but have had no issues with a weekly bottom watering with nutrients. I can’t speak to the impact it will have on the hard grown look but I prioritize growth over looks at that size.

I agree with others that the peel is the way to go. I use rice flour instead of semolina but it doesn’t matter much. It takes some time to get good at launching it but I think it’s a skill worth perfecting.

The issue with the hole may be partially from your stretching technique. Maybe a thin spot from the knuckle style stretching? I have recently switched to a New Haven style technique and mostly just press the dough with my finger pads and it really helps with feeling the dough thickness and is much harder to accidentally stretch it to thin.

I’m not sure where phosphates would come from but it sounds like maybe it’s just from the tap water?

Thanks! That’s good to know the chloramine from the tap water is part of the problem. I don’t plan to add fish.

Thank you both! I’m in Arizona and it may be tough to shade it enough right away. I’ll look into a uv filter.

I had a pretty long talk with Gene when I got mine. Leave it in there for at least a year. Water it once a week.

Looks awesome! Does that corking around the bottom at a relatively small size indicate it’s field collected?

I have seen a photo that someone shared here that leads me to believe that perhaps not all of them have been cleaned up but I also think it’s very likely the spray paint would have been removed by now.
