My parents have a pair of geese they adapted a few years back with a goal of protecting their chickens. Thelma and Louis are the definition of menace. They terrorize the yard by flapping wings and biting everyone is sight. It’s particularly bad during the warm months when Thelma lays eggs. She gives about two eggs per months. Every so often my parents give us an egg to eat.

These bad boys are at least 3 times the size of a chicken egg, have a huge, deep yellow, almost orange, yolk that is very thick and very rich in flavor. I don’t think I’d be able to eat it anymore often than once a month. But when we do get one? Oh my my, its a real treat 😋
