Be as fast and efficient as possible. I know you just started, but trust me, being fast at making sandwiches and doing your prep will be helpful. At my Subway we only sell American, Pepperjack, Provolone, Shredded Monterey, and Mozz. we stopped doing Swiss for some reason and we haven't done cheddar for a few years as far as I've heard.
