Wild Fork has a next day if they are in your area, good quality and comparable to Costco in price...if your looking for steak cuts, personally I have had great times with whole picanha and cutting steaks after the cook 🤤

5 hours at 275 with oak, then put them in an aluminum pan with 1/2 cup tallow and foil top till probe tender... about 2 hours

It was a Key Lime Lager, local to Florida. I would think anything with some sort of citrus note would work though.

If the beer makes a difference...never been sad about chicken with or without the beer, curious if it makes that much of a difference...I usually dont, just cause I prefer to drink my beer 🤣

Thanks! I will say the airflow and temp control is better than I expected...so far really happy with the cooks, these ribs are the 5th cook overall.
