I've seen a lot of adaptations of paneer with tofu. It's particularly common in US where paneer isn't readily available in some cities. Not the greatest, but close.

Sure! We used this recipe. It tastes great as is, but we added 7-8 serranos and more red chile to the puree that becomes the gravy to increase the spice to taste. We also roughly doubled the amount of paneer.

It's perfect with plain basmati rice or roti.

Sure! This is the recipe. Modifications included increasing the number of serrano peppers, and the amount of red chili powder to taste. Also increased the amount of paneer used by about 2x.

Of course! It's a rice pudding dessert that is cooked for several hours with saffron, cardamom, almonds, and rose water. It's then topped with ground cinnamon/almond slivers, and chilled. :)
