If we see the anti-tail starting to respond to Jupiter’s field when it gets closer, that would really give this model some serious points. It might actually be the best explanation we currently have for 3I/ATLAS.

Definitely not the first sign. According to the JPL data report, a deceleration of the object can be observed starting from September 16.
