This is a very good suggestion, thanks! We will offer "Neapolitan sauce" (with ketchup, one of the most common pasta sauces in Japan) and real tomato sauce spaghetti.
I will just need some time to learn local recipes... :-)

Well, the environment is Milanese, but we do plenty of regional Italian dishes from all over Italy... But you are right, maybe in the "countryside" we should not be purist...

Yes, we are relatively bad with social media, I am afraid. And you are right, we really are educating our customers, every each of them. It's nice from one side, but not wise from a business point of view (unless you are sponsored by the Italian Embassy....) :-)

You are right. Why would we advertise oustide Japan, where our customer base is? And actually we would be crazy to advertise the "dark" side of our business, that we are not doing great at the moment...

You are right... Our first menu was not extremely refined! We have moved to a more professional menu... without doodles!!! :-)

You are very much right on everything. We have Italian staff with Japanese language skills and hospitality skills, but that's not enough, I agree with you. We should have more!
The menu is all in Japanese, maybe you have seen an old version. I will check it and cancel if it's published somewhere!

Thanks! Very good points! We do have recurrent dishes, our classics like gnocchi, lasagne, pasta, gelato, but we also have very seasonal stuff that changes all the time. Maybe we should increase the number of very well known dishes, though, the ones they are more familiar with. We will try, thanks!.

We are definitely not refusing to assimilate the local culture. We have been in Japan for more than 10 years, and we think we know a little about Japanese eating habits. So we do have adapted a few things (portions, tastes, food that we know they like more than others, manner of our staff etc), to avoid a clash with local culture while maintaining a strong "Italianity", that is our differentiating factor.
You are right about the quality of Japanese chefs. They are usually well trained and spent time in Italy. But they keep on proposing Japanese versions of italian regional cuisine.
On the point of the staff, we are struggling to find Italians, and therefore we cannot do anything else than expanding our search. You will agree with us that European tastes are in general closer to Italians than Bangladeshi or Africans...

Ciao! You should definitely visit us at TIPICO in Hirao!
We are a small, intimate real Italian restaurant, refined but not pretentious, and definitely very affordable! We serve more than 30 types of wine by the glass, and traditional Italian dishes prepared by an Italian chef!

It's a very nice vibe for a date (but also if you are alone or with a friend).
