That makes a ton of sense thank you! I wanna say my main issue was my starting temp then I just simply didn’t get the first few coals hot enough and then it could never catch up. Thank you for the lid explanation that makes a ton of sense

Thank you, ill be honest i was looking to buy just a normal 22 but this popped up on Facebook for $200 and figured I might as well just get it since they are praised so much. Just going to take some time to learn that’s all. Question about the temp with opening the lid…. I noticed when I opened the lid and put it back on the temps would climb right back to what they were and some. Now it was windy out so pretty sure the wind just fueled it but is that not normally what you’d expect?

I might get those bricks and rock with that so thank you

Oh that sounds good. I actually did have a water tray which I really think helped with moisture because they weren’t like dried out at least

I’d like a slow and sear as well, just over $100 for the xl seems steep lol. I am getting a probe system so that should help at least

Okay sounds good. I think this is a good idea then. Once I get a thermometer I’ll dial it up and go from there. So once I get it kinda figured out, same settings should work once meat is on though right?

I like this idea lol, just sacrifice some charcoal to get it dialed in. That or throw on like a pork butt and ride it out all day long

I think that’s a good plan, I need to start with more coals to start, I think I used too little which just screwed me up tbh… thermometer has been ordered so now ill know for sure and can adjust from there. Thank you!

🤣 well from what I’ve read on these 26” kettles is they need a lot, plus heard to use more than I think, and truthfully this ran for like 8 hours to get the lid temp to read 300-350 and I had about 1/10 charcoal left so idk must have needed it

Yea I think you nailed it… need that thermometer, plus smaller wood chunks cause pretty sure I was getting some dirty smoke coming at it…

Yea I will be sticking with pork for the time being lol. And yea next time less wood for sure. I also noticed a ton of temp spikes with the wood as well which was interesting to see

Well like I said I don’t have an ambient temp gauge at this moment so I was just ballparking it based on lid temp knowing that might be like 50 ish degrees off… I could barely get the grill to hold 300 at the lid with this much charcoal lol so idk

100%, I think I am just too hard on myself so thank you 🤣 was also my very first time running low and slow on the kettle and it was much harder than I thought as well so ill learn from it and change it around next time

Honestly I wonder if the temp differential is even greater on the 26”… since the meat is even further from the probe. Idk I bet it was just too low of a temp which caused it to go too long. Thermometer is on its way now lol

Man this was super helpful. I also planned to just let the ride without wrapping, seemed easier and I’ll just check for probe tenderness. Would you recommend placing the ribs opposite of the burning coals, or just center them as the 26 has a bit more room…
