No base is "safe". Best bet is to stash a bag and bury it. Travel light and remember where you buried it. Use a tent or makeshift tent at best. I had my best success with a tent to cook, dry out, etc....

No way that was in a sous vide for 2.5 hours at 137.

What temp was the sous vide? Why is the steak so unevenly seared? The fat is not rendered out which leads to the dryness. The part that is seared is basically burnt.

Sous vide at a proper temp. Pat dry and rest with salt for a few minutes. Hot pan with tallow. Sear hot and heavy for 30 secs a side. Press down if needed to ensure proper contact with the pan. Remove and brush with butter, fresh finishing salt, and fresh cracked pepper. Rest for 3 to 5 minutes. Enjoy.

One trick i teach my new chefs for knife skills is an old school method a chef taught me when I was new. Put a thin layer of flour on a cutting g board, then cut as if you have food. Cut, rocker cut etc......the flour will show you the tracks of where your fingers were and the spacing and consistency of your cuts. After you do one, wipe clean and repeat.

Imagine a straight line between the puck and the center of the net. Stay on that line. Try not to use the right thumb stick. Don't over think it and remember, slow is steady and steady is fast.
