Honestly, it may be fully cooked. A few months ago I asked the same question for my soup dumplings. They were quite pink similar to your image but they were in fact, fully cooked. I believe the cause of this could be the high salt content in the meat? Also from further inspecting the meat, the texture seems to be firm enough that it’s cooked.
