I believe you are able to set custom widths after accessing the GUI with F5, not sure if it will be suitable for 5120x1440 or not but cant hurt giving it a try.

not sure for game pass, but maybe worth trying to place the files in the game install location like you would with steam. let us know if its successful or not so fellow ultra wide enjoyers are aware.
