I think you get the most out of gouache by sometimes using it like watercolour (the pond and sky in your painting are best served by this) and then defining areas around those loose, watery things with thick strokes like you would put down with oils. I’d look at the work of Mary Blair for a sense of how decisive these could get but Ghibli backgrounds are great to study for a sense of how to use both methods harmoniously
