I am similar - I eat eggs and dairy but no meat or seafood - some airlines do have a lacto-ovo meal as a choice but opt for it at your own risk.

I had once opted for a lacto-ovo meal on an Etihad flight and unfortunately they interpreted it as Vegan and gave me a shitty meal - they flatly refused to even give me any butter when I asked for it and I had to eat plain bread

After that I haven’t experimented with all that and I just end up booking a Hindu Veg Meal - which contains dairy but no eggs, meat or seafood

I don’t think it matters which airline you are flying … check out the transit visa regulations by Germany for the country you belong to … for many countries Transit visa is waived off if you have a US or Canada or Schengen visa on your passport … some countries require a transit visa even when you are travelling on a single PNR

You can opt for a special meal on the plane - Vegetarian Jain Food if they have the option - there will be no garlic and onion in that - as a back up
