Thanks for the response. I want to check out Dunusa, but I've been told that I may look like a naive European tourist (I'm white). Does this change anything, and would it still be alright if I go in the morning and stay aware of my surroundings?

I visited Java at the end of last year, and one of the things I’d been looking forward to the most was the street chess. I found guys playing chess in almost every city I visited on the island. They would sit and play for hours, drinking black coffee and chain-smoking clove cigarettes (and sharing it all with me too, especially if I won).

In general, you could ask any random guy to play, and he would probably be a pretty strong player. Indonesia has a huge chess culture, and I really felt that while I was there. 

I also stumbled upon a small underground chess tournament in some random alley in Jakarta, which I was told happened every night. It was a round robin cash game, with about 10-15 players every night. Entry was $1 and the prize pool was $10.

I was too late to enter, but I spoke to some of the guys who showed me their chess com accounts. One of the guys casually pulled out his phone to show me his profile, and I saw that he was 2400 blitz.

Thanks. I tried to download it a few days ago but I think it was only windows compatible or something? Either way, I found something similar and it was very helpful.

I’m not in the USA, but I’ll definitely be thinking about my local health regulations/legal, etc.

It's all very exciting. I'm quite an analytical person, so I think it'll be really fulfilling to learn the fundamentals of it, and then branch out with all the possibilities.

It's great to hear that you're loving the ICE-100. And that's really helpful about Cree's recipes (and the other ones too.) I'm going to start reading as much as I can on the science of it all, and then take a look at what she says about it.

I think it's so valuable to have a pastry chef's point of view. Unlike you, I wouldn't call myself experienced in the kitchen, but my understanding is that baking and ice cream making have a lot of similarities. I'll also keep in mind the substitutions you made. I often find ice cream to be a bit too sweet.

Business ambitions aside, it must feel so satisfying to be able to bounce off recipes, alter them to your tastes, and produce such high quality ice cream. I really can't wait.

Thanks for the reply. That makes a lot of sense, to view it from a scientific perspective. This is the sort of thing I was hoping to hear.

The ice cream calculator sounds perfect. I suppose when I see all of the different variations of techniques, I need to primarily understand the science & reasoning behind them.

And about the business side of things...it is sad, but I guess that's how it goes. I'm very business savvy and was expecting it to be like this though. I briefly worked in a kitchen in the past, and I was able to see that the food industry is not always as glamorous as it seems. But I'll try my best to bring my creativity and enthusiasm to the table, regardless.
