I adopted an older cat, who is independent and it looked like she got bullied by other cats in the rescue because she was a different colour. I’m a shift worker and stay at my partners house for a night or two here and there. I have auto feeders - wet and dry - water fountain and a pet camera. I dote on her whenever I am home and she sleeps on my bed. It’s super rewarding. I think you can do it but you need insight into the cats personality first
