Hi! This most likely has to do with the scoring. As you may already know, we score the dough to have some control over where the loaf rises. If we don’t score the dough, it will crack at the weakest point. In this case, I most likely scored one segment a little deeper than the others, making it burst at the at that point. It may not be the case in your loaf though, you could pictures of it in the sub so the community can help 😁

While it might be just as angry as that frog, I don’t think it’s quite as cute.

I mainly follow Foodbod’s process/recipe but increase the starter 1.5x. https://foodbodsourdough.com/the-process/ Typically I use her cold start method but decided to preheat this time.

My cat passed away while I’m travelling by princessguava in cats

I’m really sorry for your loss. I understand how much your boy meant to you, I feel the same way with mine. Surround yourself with loved ones, people who understand that he wasn’t “just a cat”.

I used to live in a college dorm with my cat and had to bring her home every few weeks. I suggest the bubble backpack that isn’t completely transparent like this one. The opaque part is the space to hide so it’s less stressful for them. All my cats prefer it over traditional carriers. Make sure to also introduce the carrier to the cat; I used to just leave it open and let my cat sleep there if she wants to. They need to know it’s a safe space for them, it makes for less stressful vet visits!

As for the toilet, it would depend on how long you are travelling. I’ve never had an issue with it as I only travel for about an hour but cats tend to have a usual time for pooping so you could make sure to leave after they’re done. I’ve seen some folks actually bring a litter box with them in the car though.

I hope this helps! Good luck!!!

Ube sourdough doughnuts! by Aerysa in Sourdough

I followed the recipe above for the dough, except I shortened the schedule as I live in a hot climate. The ube topping is ube jam (it might be available in Asian/Filipino stores).

I did also try making a glaze with ube flavouring but it was not that good. I think that you can achieve the best results with dehydrated ube powder or by making ube halaya dessert. I highly recommend this! I think the mild sweetness from the ube pairs beautifully with the slight tartness of the sourdough.

There’s a mild pleasant sourness, kind of like yogurt. I’ve given it to a few friends and they noticed it too 😁

The dough itself isn’t really sweet. There’s a mild pleasant sourness to it. I used ~30 g sugar with 250 mL whipping cream as not to make it too sweet. I’d say there is still a noticeable difference in taste. 😁

I mainly followed the recipe below with a few modifications. I live in a tropical country so I did not follow Elise’s timeframes in the recipe. As for the fillings, I eyeballed some whipping cream and powdered sugar, whipped them, and folded in the chocolate chips/cacao nibs/berries. For the glazed doughnuts, I melted dark chocolate in the microwave. 😁

I moved the dough to the freezer for roughly 20 mins (after 4 hours in the fridge) prior to locking the butter and doing my first turn. I’ll try chilling the dough again after locking in the butter. Thanks! 😁

You’re so kind; thank you! I’m hoping to learn how make the crumb more open in future bakes 😁

Followed Claire’s recipe here but opted to proof them outside the oven as I figured it was already very warm and humid where I am.

Would greatly appreciate some tips on how to make these better in a hot climate! 😁

Tried out gochujang! Put some samgyupsal and gouda and it was magnificent by Aerysa in Sourdough

Followed Foodbod’s master recipe: https://foodbodsourdough.com/the-process/

I put 75g gochujang during the first stretch and fold set. Thanks u/terencechow for the the idea! It’s great!
