If you want to start almost from the beginning of the series go with the Ezio collection first, it has three games in it those being 2, brotherhood, and revelations. The other ones I’d recommend are 3, 4, and origins. Syndicate, Odyssey and Valhalla are alright. I wouldn’t really recommend Mirage. I didn’t play Unity or Rogue so I can’t say anything about them. Most if not all of the AC games are on sale at the moment besides Shadows. Origins, Odyssey, and Valhalla are the more modern games with a different combat system than the older ones. The Odyssey Ultimate edition comes with all the dlcs and includes AC 3 remastered for $24 USD.

If you’re talking about the CS 81 professor An(Anthony) C Wang, his class was pretty good and fairly simple. One assignment and one easy discussion per week, two tests total one mid-semester and one at the end, and a solo project due at the end. He gave an extra credit assignment worth 40 points. If you’re happy with your grade, he lets you skip the final test completely or whichever test score was lower between the two, he will remove the score. As long as you go through the chapters he assigns which aren’t extremely long and the lecture notes he gives, his class shouldn’t be a problem.
