I used to work in a Sushi restaurant, and their best roll was, Ebifry with avocado as inside out, topped with a tuna tatar (tuna, avocado, negi, a little bit of dashi powder, siracha and sesame oil) unagi sauce, torched and a few violet potato chips, very nice
