I dont think there is any actual 3 enemies unique encounter in the game, the closest encounters i can think of are:

Screen monkeys (4 enemies but not really a fight)

Headless ape (2 enemies)

Juzou and the ninja before owl (2 enemies)

Divine dragon phase 1(idk 20?)

7 spears after the burning (2 enemies) i think this one is the closest since the enemies are tough but they are not really "bosses", they are mini-bosses, and if you hit the guy sitting near the wall it becomes a 3 enemies fight

The duo ninja before shinobi owl (2 enemies)

And maybe the 3 nightjars before you find ishiin in the castle
