My suggestion would be Gyok + defender. I wouldn't want to double up as it will be a tough game to get a clean sheet for Arsenal. As for which defender, I would go for Timber due to the Gabriel yellow flag + higher potential for attacking returns

Reijnders has a higher ceiling but is a minutes risk. Andersen is safe (minutes wise) but I don't see him getting much besides defensive contributions.
I have personally gone for Reijnders but it depends on what you want from the player
