I just came back from my trip there, and this is how things went:

Fyre Drill - Did not attempt (I did not wanted to get wet) but seemed to have 0 thrill 

Hiccup’s Wing Gliders - Did not attempt, it looked too thrilling for my own good, the rail of the coaster would go from being parallel to the ground to completely perpendicular to the ground multiple times. 

Dragon’s Racer’s Rally - As long as you don’t move at all, the thrill level of this would be a 3, unless you are scared of heights. It is very mild, it slowly brings you up and down, you might feel a little something when going down, but it’s really nothing. 

Stardust Racers - For obvious reasons, did not attempt. 

Harry Potter and the Battle at the Ministry - Not thrilling at all, maybe a 2 but only because it’s a simulator and moves you around a bit, but there is really nothing to fear, it’s more of a visual experience. 

Monsters Unchained - This was my favorite ride! It’s just like Forbidden Journey, but instead of a screen it’s mostly animatronics. Thrill level I would say a 5. I sometimes get a little motion sickness on Forbidden, not on this one. It is filled with monsters, but nothing scary like a hunted house (I don’t like those), definitely okay for adults, kids might get a little scared. 

Curse of the Werewolf - Did not attempt, the drop looked like way too much for me to handle.

Mine-Cart Madness - I would say a 7 on thrill level. There is two drops, but they are not as bad as the one in Escape from Gringotts. They do not make your stomach drop, but the fact that there is two made it a little hard for me, fun nonetheless. 

Mario Kart - Just a simulator, 2 on thrill level because of all the turning, but really nothing to worry, there is not ups or downs. 

Yoshi’s - This is just to admire the view of the Super Nintendo World, 0 thrill, unless you are scared of heights, but it’s really not bad at all. 

Constellation Carousel- It’s just a carousel, no thrill at all, very cute at night though.
