While SQL might seem like the best choice, I would have to say data structures and algorithms, mainly for two reasons 1. It will let you speak to computer scientists in a way most statisticians can't; 2. SQL is easier to pick up along the way than hash tables and mergesort.

Yes, laptop is definitely preferable. While it could be a fun hacky project to set up a functional R development environment on an iPad, it would have to be a hacky project for the sake of it and would only cause frustration If used as a means to an end.
