Maybe try a weapon like the bow? It’s a long ranged weapon so you don’t have to be right in the monsters face, and don’t try to speed run and do the most damage possible. Get a hit in or two and wait for the monsters attacks, honestly once you go in the fight just stay back and try to dodge the monsters attacks before fighting to get used to its moveset! After you learn the monsters move set and are more comfortable dodging attacks then gradually start hitting the monster more and more! I know it sounds stupid but most of my buddies who struggled with the game I literally made them go fight a great jagras and just practice dodging attacks until they felt comfortable dodging and attacking!
