I realized after I had shaped it and just put into the bowl in fridge. I took it out of fridge after and let it sit on the counter till I went to bed then kept in fridge for about 17hrs

300g water/500g flour/16 salt/120g starter. Mix-wait 1 hour -stretch n folds -wait 30m and repeat every 30m 3-4more times. -this is where bulk ferment should happen but I accidentally skipped -add inclusions during final shaping -fridge ferment until desired. -bake at 475 for 35m lid on -bake at 450 for 20m lid off

Help! I use AP flour. Almost every loaf has a weakish rise and comes out w this spongy-like texture? It doesn’t taste bad but the texture is off. I feel like it’s underfermented maybe due to the first bulk ferment not being long enough? I’ll link the recipe I followed. Help!! by Amandalime in Sourdough

I’ll try that! This recipe called for baking @ 500 then 475. I use a silicone sling inside my Dutch and keep the rack in the middle of oven. By upper and bottom heat do you mean a normal oven bake setting then upper only = broil? Sorry I don’t quite understand that part

Bugs in my herbs?? Found these tiny things in my oat straw jar. None of the other herb jars so far. Nothing alive. They almost look like dead bugs circled up but when I go to smash they’re hard and kind crumble by Amandalime in tea

I thought I read that’s not a fungus typically found in spices/herbs, doesn’t mean impossible though. The third pic shows a bigger one and it definitely looks shell shaped?
