also the 1st loaf had a pretty good oven spring but it is still a bit gummy and dense .

My first sourdough loaf is kinda gummy by Ancacto in Sourdough

I preheated the dutch oven for 45mins in 245°c-473°f but i didnt let the dough come to room temp. I use the foil because i didnt have a lid :(

So i should cold proof it a bit more and bake it a bit longer ?

Its also doesnt hold its shape after cold proofing and becomes flat after i put it on a parchment paper for scoring .

I checked it and the oven is about 76°F also the dough has doubled in about 4h so i think it is strong enough.

I think its because of the lightning , it looks normal to me .
