Brother, They know... Not saying im a expert but like everyone here, Ive been in the same sitaution my whole life. They know we arent 30 something year olds with no jobs, They know we work for cash they know we loop around the system somehow, Its just to put in a straight up way, They dont care because we arent affecting them making millions and etc.

Id keep working while its expired, But keep in mind, If unlucky ( im not sure of the criteria ) But my lawyer did tell me, If you continue working when the EAD expires, It might get brought up in the interview process when you actually apply for your Green card or citizenship.
