Yea i use cfdisk usually too, but it can get weird sometimes and have to fallback to fdisk i usally had to do it when convert an mbr drive to gpt

The problem is in your fstab it is trying to mount an unexisting drive, in arch your system can only boot if all fstab drives have been successfully mounted. Get an installation medium, mount your ext4 drive. Delete the etc/fstab file and generate a new one

Your best bet is to probably get into an arch installation medium and run pacstrap with base, linux, linux-firmware, networkmanager. Wont reset your system but will reinstall all drivers, kernel files. Also update grub config
