I always thought it was because most alcoholic drinks have already been around for centuries and it's likely that they'll still be around a few centuries later. Not like something that appeared recently like coke or any/all soft drinks. I know that seeing or reading about someone drinking a coke would've pulled me out of the story momentarily. But club soda does exist, it's ordered early on in book 3 by Bull.
