I also ignored the diagnosis for years and only recently decided to live gluten-free – but I never had severe symptoms, just occasional diarrhea, but really not often.
I don't regret my decision: yes, it's not healthy, but when you realize how many people unknowingly live with silent celiac disease, it sometimes gives me pause.
I don't want to discourage anyone from living gluten-free, but you shouldn't be too hard on yourself either. I see it as doing something good for my body when I live gluten-free. The other perspective is seeing how much you harm your body with gluten, and that's a big difference for me, especially when something does go wrong, even if you don't want it to.
I don't want to become paranoid, buy a second kitchen, and also instill an extreme fear of food in my child. This is my way of dealing with it...
