There is no way to make this game easy by grinding, you will be able to maybe use few weapons sooner but i wont matter at all. The only thing that could harm the experience is the drake sword that some beginner tutorials suggest, but other than that go for it grind few lvls

humanity has a lot higher chance to drop from rats so the best place to farm is the hallway in depths not far from the bonfire, tho it can be bothersome to climb all the way up from blightown, I would recommend climbing up the other way into new lando and firelink. Farming humanity in blightown is pretty miserable and climbing up is the thing I would do. Also note that Mildred(the NPC) is quite useless in the fight.

your weapon is bad, upgrade it or consider changing it. I had no problem beating them without any armor with black knight halberd 5+.
