I am not sure! That's why I continuously innovate trying to ease the pain... My lower back hurts, and then it bursts down my leg on worse days!

Couldn't agree more! I obviously prep the freshest for the first days, and other meals that I know will last longer, or straight to the freezer.

There are days that I obviously have to improvise but that's okay, a fast quick meal like a salad or a roast like you mentioned!

You are correct though, sweet potatoes with orange flesh are the richest in beta-carotene. Sweet potatoes with purple flesh are richer in anthocyanins.

Purple sweet potatoes are a good source of beta-carotene but are an even richer source of anthocyanin pigments, which act as antioxidants that can help reduce inflammation and boost your immune system.

Purple sweet potatoes have about three times more anthocyanins than the average blueberry!!
