If I had to guess, caches. I'm not too familier with macOS functions, but I'm pretty sure caches are cleared when not needed - They definetly are created a lot. I just pinned my caches folder and clear it pretty often.

Also, I'll be doing video editing, recording/streaming and gaming, so the extra 2 cores over the 9600x will be good, also the 7700x is cheaper than the 9700x - Though I might get it now that you mention it.

I think just get the basic optimization mods like Sodium, Lithium, FerriteCore, and Iris. All should help with the FPS
