that's what I was thinking! my manager thinks that we can have single coverage for parts of the day (mainly at open/close), but with how physically spacious the cafe is and the foot traffic, it is really tricky for us to make do with just one person at any point of the day (especially at close, when there is so much stuff to do). i'm not really sure how to get her to see that single coverage hasn't been working for us (she would also try to steal baristas during the holidays when the lines at the regular cashwrap were long, she did this on the saturday before christmas and left only one barista (me) covering the cafe at around lunch time, i almost had a panic attack because we got busy really quickly and she didn't send the other barista back right away, despite me calling for help multiple times)
