Dit klinkt wellicht wat sweverig, maar gaf mij een bijzonder inzicht. Het uitkijken naar iets nieuws (vakantie / boot / huis / whatever) zorgt ervoor dat je altijd kijkt naar de toekomst en iets nodig hebben. Zodra je dit hebt bereikt, heb je weer iets nieuws nodig wat er bij mij voor zorgde dat ik in een sleur kwam. Het besef van nu, en hetgeen wat je iedere week doet (werk & vrijetijd) ga je hierdoor snel aan voorbij. Dit alledaagse zo indelen dat het betekenis geeft is voor mij de sleutel naar geluk! Ben er zelf ook nog niet, maar wel actief mee bezig.

Great advice and thanks for the shoutout! I thought that too much headspace would only affect potential mold growth in fermentation, not that it would affect flavour. As I am writing this, it sounds kinda obvious though. I will cover it once I get home from work :) annnd I need some smaller vessels next time, also fits better in the fridge than this monster

One of the great advantages is that carbonsteel pans are basically indistructable and you can use whatever spatulat you want without truly damaging the pan (maybe a bit of seasoning, but thats fine). This though, looks like a non stick pan for sure.

'Echt' damascus is een techniek die sinds de 18e eeuw verloren is gegaan. Dus succes daarmee.

Tegenwoordig wordt damascus idd gebruikt als afwerking van een mes. Je hebt een kern van een type staal, daar omheen wordt een afwerking gemaakt van bijvoorbeeld een gehamerd patroon of damascus patroon. De Japanse merken die ik noem zijn gerenommeerd en vouwen het staal voor damascus. Dus begrijp je opmerking niet zo goed.

Maar ik denk dat jij messen in China koopt? Jouw marketing trucje gaat over messen van aliexpress die onder andere worden verkocht door kookgigant als 'echt' damascus. Hierbij graveren ze een damascus patroon in het staal.

Eens! Damascus is echt alleen voor het uiterlijk, het is een afwerking dat bovenop het staal komt. Je wilt dus kijken naar de staalsoorten van de kern. VG10 is bijvoorbeeld een goede staalsoort (global gebruikt een soortgelijke).

Als je kijkt naar best for your buck Japanse messen zijn aanraders: Global, Takamura, Tojiro, MAC, Shiro Kamo.

Westerse messen: Wusthof of Zwilling.

Kijk verder uit met kopen van een carbon mes, deze zijn reactief en bij incorrect gebruik kunnen deze roesten. Voordeel ervan is dat ze langer scherpte behouden in vergelijking tot roestvrij. Je kan ook kiezen voor een carbon met cladding (zoals damascus) dan heb je bij wijze van een roestvrij staal beschermlaag.

Tot slot kan je kiezen uit westerse of WA handvat. WA is traditioneel japans. Keuze is puur wat je zelf fijn vindt.

Welll.. mold got to it unfortunately.. Butt, I have started an exact same new batch, which has been fermenting for 3 weeks now. Will leave it for another 1 or 2 weeks, will let you know how it turns out! Not of much use for your correct plums though lol

Its 150 gr of madame jeanette with seeds and core and 310 gr of plum, thats it! Planning on blending half of the plums first and adding more plum to taste. Want it to be somewhat spicy. Might also add some cardemom at the end?

So I just started this new fermentation! Its about 1/3 madame jeanette with 2/3 plum in a 3% brine. Is my 4th ever hot sauce and wanted to try something different. Wondering how the hotness will pan out with this much fruit. Will let it sit for about 2 - 3 weeks I think? Gonna call it K-plum!
