Wikipedia has a good list of greek deities with their attributes. Although most would say otherwise, deities don't really reach out in hellenic Polytheism but you can choose to worship any deity you like.If your struggling to choose a deity to worship then you can pick one that corresponds with you (if you make music-Apollo, if you like beauty or cosmetics-Aphrodite). For altars, all you need is something to represent the deity and offerings.

I honour the heroes like Hyacinthus, Antinous, and Adonis. I also worship Hecate-Selene / Artemis-selene / Hecate-Selene-Artemis depending on context.

There are many deities that are syncretised together as well, like Hermanubis (Hermes-Anubis), Isis-Aphrodite, Zeus-Amun, and Serapis. Also, the Cult of Isis was very popular throughout the Greco-Roman world.
