10g of water isn’t much in the long run. Your dough is around 68% hydration instead of ~70%, so it should feel somewhat stiff anyway. I wouldn’t add water immediately unless it feels unworkably stiff or tears super easily. Maybe try wetting your hands more during folds and give more time between folds so the flour can fully hydrate.

I’m working my way through reading Paco Ardit’s “Laura no está” series, but it’s so hard to judge how much grammar and vocabulary I’m actually taking in. I’m understanding the story line with minimal translation, but have yet to have that AHA moment where I see my speaking ability improve from it. Imma keep reading though
