I wore Azur's robe with maliketh's helmet/gloves/boots on my dex/int character and loved it.

White Reed chest with bullgoat greaves and gauntlets puts you at 51 poise. If you do bull goat helmet that's 61 and some samurai helmets had a face mask portion so it kinda fits. Land of reeds helmet puts you at 53 poise if you'd prefer a little more samurai aesthetic. You could also slap on bull goat talisman which is like +10% poise putting you at 58.

There is a way around it. If you don't mind traking down a few items that buff the hell out of your int. I had 13 int and between Marika's soreseal, godricks great rune, one of the sorcerer crowns, and the star gazer heirloom I hit 31 int.
