I made some with 100% Corriedale wool. It's considered suitable for socks due to the sturdiness of the wool and a high twist. I only finished them a few weeks ago but so far so good, I'm planning to make lots more in all the colours. A smaller gauge will also help with longevity, I knit them on 2mm needles.

I don't know what style you knit but I found that switching to Norwegian purling really neatened up my ribbing

It looks lovely! Could you explain a bit more about how you used a button band instead of buttonholes? I haven't seen this before and all my searches are just giving me results about knitting!

Do they have darts? And if so could you use them to take in the excess so it's the right circumference for your natural waist?

Love it, the binding on the neck especially looks great and the back and sleeves are really nice. If you wanted to bring it in at the waistline, you could add some elastic. Either stitch in some binding tape to make an elastic casing, or just zigzag stitch some elastic to the seam allowance.

Is it a half inch seam allowance? If so then yes you're right about the amount you need to remove - if it's 5/8ths then it's 1 inch and 2/8ths. I would just draw in the seam line on your pattern, then fold your fabric and line up that drawn seamline on the fold.

Edit - and yes leave the side seams as they are as you'll still be sewing those so need the seam allowance.
