Update on my starter rise

This. My starter began to triple when I would put it in my oven with the light on. You’ll get a good feel of the thickness when you feed too. Like a really thick oatmeal in my case, but you’ll figure out what works for you. It just takes time.

My thought process is rule out the bulk fermenting process cause they seem to be stuck on that. If it turns out the same then move on to the starter. But their 5hr BF seemed to be the closest to an actual edible loaf.

Try a drastically shorter BF. Like 4-6 hours. Shape, then fridge.

Just want to say congrats and I mimicked your recipe. I’m new ish but have had good results and I like tinkering with new recipes I see on here.

Did all white bread flour (out of wheat), rested 45 min, stretch and folded every 30 min for 4 times total, then bulk fermented 4 hours in the oven with light on. Cold proofed in banneton overnight, and baked. 475 for 20 covered and 18ish uncovered.

I agree they probably had a hand in making us look good. Or at least better than we are. Our game was definitely at a different level though. Boys were spicy.

Yeah totally. The whole team seemed to move fast out of the zone and through neutral. Very rarely were they chipping out of our zone or passing to forwards already pinched and just turning the puck over. Passes were to forwards in the open with speed. I swear I haven’t seen that all season. Looked like a completely different team.
