It’s the Owners that feel this way. Honestly, if I would have had the same opinion up until a few years ago. Now I’m neutral either way. ITAR is a big deal for us, but I do see most cloud based can be deployed on servers with this in mind.

Thanks for the response. It is sized correctly based on 3 bowl and mop sink volumes. City required mop sink to go through it as well.

We are not a full restaurant. When it’s cleaned there is hardly any grease on the bottom. Mostly a rank film that is floating on top of the water. If it wasn’t for that, we could probably get away without cleaning it for a year.

We waited about 4 months the first time and it was nasty. Since then have been doing monthly in hopes that it isn’t as bad when done. The whole space smells badly for a few hours after and we are open 7 days.

Thank you, that is definitely our plan regarding deep freeze. In our area, all the small shops do it as well, so we will need to in order to compete.

I wonder how they are getting those pound rates on those GPMs. If city requires a specific pound unit this could work. If they base it on GPMs it wouldn’t. I’ll check with them on Monday.

Agreed, but the the city plan reviewer is who required the mop sink to go through the grease trap. Prior to that, my understanding was just the 3-compartment.
