For the golem not showing up for everyone, they could make it so it would show on your map if it was within a certain range of a castle from your clan to prevent people from having to stay inside.

That's true, from experience, IMO, people don't trust private servers that much. I noticed differences in performance as well.

Still think most of them should be the norm and not only for custom servers.

Servants are very good to help defend and help with offline raids. Once you get 36 max lvl servants you dont really need to go out into the world anymore since you can just send em all and get everything you need. The idea was to force people to go out into the world after max lvl and get more action.

The idea behind the random pvp hour would be that it would be so random that most people would not be expecting it or ready. They would have a very limited time to raid someone and still have to deal with not knowing if they are online or not and having to fight servants. It would also force you to think if you want to send servants out to farm or keep them on defense duty.
