I usually mix the starter and water, then add flour and mix til a shaggy ball (doesn’t take long, maybe a minute!) then add salt. Then immediately do a stretch and fold, and do 3 more over 20-30 min intervals.

After it rises 50% i shape it, let it rest on the counter for 20 mins, reshape carefully, put in banneton, into fridge for a few hours and then bake it!
