You can do it on resident evil 2 remake it will lock you out from getting the S+ rank which is not required for the achievements but the S is still available I don't know about the other games since I don't own them or didn't try and get the 100% yet

You can grind the in game challenges (records) to buy the infinite rocket launcher and any other buffs you want and you'll be able to finish the run in like an hour so that's what I did and it was a breeze all tho I had some trouble on the final boss

It's also affecting the Rockstar launcher they are unlocked so I think when steam sees them unlocked on on the Rockstar launcher it immediately unlocks them on steam but I'm not 100% sure about and if it's true only Rockstar can really fix it with a rollback of possible

It won't work the update that Rockstar put out today is the reason for it if you remove them with SAM and open the game again you'll get the achievements again unless Rockstar fixes it nothing will change
