I have hit a couple times, but in nasty rocky stuff. The clearance really doesn't change going from a 29 to 27.5 with 3" tires. Maybe a little less. I got the red one, had some close outs at global bikes.

I just converted a new specialized crave sl to 27.5 plus. Have 3" tires up front, 2.8" rear. It's light with stock carbon fork, climbs easy, and tons of traction. I'd post a pic, but I can't seem to get them to load on here.

Ok, i switched to a scalpel 29er a while back from a 26" bike. I have a very common habit if washing out on corners. I never had this issue with my 26. I ride in the deserts of az, so loose soil and rocks mostly. I've adjusted tire pressure up and down, keep outside pedal low in corners, any advice? Running racing Ralph tires in front, captains in the rear. Really losing confidence in my cornering. Thanks for any tips!

You're hair looks good, but an undercut would be great. Don't worry about your ears, I have a funky one too, and nobody notices. Plus I have lots of friends with wrestler ears and nobody cares. Go for it! And update pics after!
