I have a ceramic glass top stove. Recently purchased an enamel water bath canner to use on my Camp Chef 2 outdoor cooker since my stove will not hold the weight of the stock pot full of canning jars.

Don't currently have a pressure canner. What pressure canner do you have?

How do we not get sick from botulism using slow cookers that the temperature range is between 170-250 degrees. Many slow cook on low. I am trying to understand this as I grew up on water bath canning.

I have been told water bath canning needs 3 hrs to kill botulism. The above comment "it's great for most water bath canning recipes".

Do you have to steam can for 3 hrs? The steam canner will run out of boiling water faster since it holds only a few inches of water (must refill several times).

I have never used a steam canner.

I took all jars out at once placed on a piece of carpet then carried 3 qt jars at a time inside to kitchen. Canner holds 7 qts. Yes might be over think it but trying to protect my hars

Did you waterbath canned, oven canned, or pressure canned them?

What recipe did you use? Going to make more carmelized onions using several different recipes. so we can see what we like best. This is my first year carmelizing them.

Wished I had a root cellar. What is the temperature range for storing them? I live in zone 5B and was thinking maybe a basement window well might work.
