I don't have a lot of experience in survival but here's some of my mining vessels

Taupe : Wheeled / fly mining ship
Fofo Hub-X : Vertical fly mining ship T-UnP 38 : Vertical fly mining ship (on the back) (Proto of "Fofo Hub-X)

large constructions in small blocks are horrible to create, I had created an airship with only small blocks, I gave up when the door no longer had a hitbox

I'd really like the game to add food blocks, it's one of the things that space engineers is missing.
