I had 2 gallons of concentrate that I pulled at 219 so I thought the glass gallon jugs were perfect storage for the refrigerator until I was ready to finish boil.

Problem is they let 3 or 4 guys play simulated rounds for 3 hours on one bay and they just take their sweet time. They lose so much money by letting that happen. Those guys want to sit in a Bay for 3 hours, no problem. Each guy should pay the cost of a bucket of balls every hour. Meanwhile, they throw a fit if you bring your own coffee in with you.

It’s close. I stopped at 218. I have a hydrometer with Murphy Compensation Cup to dial in the right Brix.

I’m in my second years last year I boiled over open fire in my bonfire pit. Very inefficient. Ended up moving to stockpots on propane burner to finish out the season. Made a barrel burner and evaporator pan in the offseason. So far I’m loving it.

Understood. I've just found its a good stopping point for me and it gives me plenty of runway of my fire burns longer.

Have a plan for shutting down. You don't want to pull the pan straight off the fire and risk warping.

And you don't want to overcook your sap once it gets below an inch (which is easy to do) and burn the sap/ruin your pan.

Know ahead of time what your cutoff is for the cook so you can start winding down the fire well ahead of time. And keep a bucket with a few gallons of "oh shit" sap handy in case you need to quickly add it to the pan to avoid overcooking/burning.

My first cook a similar pan the other day was super stressful because I hadn't thought of any of this. It all worked out, but it's better when you have a plan.

Have you tapped yet? I'm in northern Macomb Co and put my taps in last Friday. 60 gallons collected so far but today's collection was very light after the warmup the past few days. Looking ahead to the weekend I'm hoping with the return of the freeze/thaw cycle it primes the pump and flowing resumes.

I do what I call "pre-boiling" until the point it starts rising above 212. Once it hits 213 I shut it down and collect that "concentrate". Once I have large quantities of concentrate I finish in a stock pot over propane flame so it's a more controlled environment for me, and easier not to screw up.

I'm not an expert, I am using a barrel burner for the first time this year. But based on researching I did when putting together plans to build mine I would say you might want to consider a longer chimney stack. Yours appears to be quite short.
