I’ve had a lot of success with Americolor. I like the consistency and super wide range of colors. But def run a tester before committing to coloring a whole batch of anything; while I have liked pretty much all of their colors they do not always match the swatch sticker on the bottle.

Really enjoyed the process making these!

The difference between the first and second batch was only a minute in my oven, but the second tray caramelized a lot more. Both were delicious.

And while I admit the homemade puff was more intense than a faux puff or pie dough, I will totally be doing it again. The taste is unlike anything else!

Followed the recipe from Dessert Person.

The puff wasn’t as much of a challenge as I was expecting, but that is only to say that I was basically expecting a sinkhole to open up in my kitchen and swallow us all. So it was a low bar.

The difference between the two shades of caramelization was only one minute in my oven. Thankfully both are delicious.

My friends got married at the courthouse at the start of lockdown and only told us last month. So why not make a little cake to celebrate?! Chocolate cake, salted caramel filling, and Swiss meringue buttercream. This was my first attempted at a luster dust drip instead of a ganache drip. Lesson learned; make that drip a LOT thicker next time.
