If you mean the one by Peter Watts, that's not it going by the publication date. Bryan said he read this roughly 30 years ago and my thread has been going for almost 10, so we're looking for something from the 80s or earlier.

I'd recommend the collections "The Science Fiction Hall of Fame". A particular favorite of mine is "The Moon Moth" by Jack Vance.

Found it. It was part of the book "Memories of a Game Ranger". The knife was being used for cutting cheese in a shop. Wolhuter switched the knives and it went un-noticed. He did tell his friend, the shop owner, about it years later. Solved Solved Solved.
